Actually, just saw your post about testing Nachos. That's awesome!!! You mentioned that you're testing it with queso though. I hope you're able to improve on it. I tried it when it first came out, and it was so thin & runny with very little flavor.

Do you know if there are any kinds of tests/screening that can be done to try and catch this kind of thing before it happens?
