Preserve it by freeze drying it. The issue us most lyophalizers aren't that big.

Remove moisture and preserve in a dry container, and it will last forever.

The process is basically, cool down to -80C using liquid nitrogen or a fridge, then reduce the pressure to ~200 torr. The Ice will sublimated leaving the structure of the cake unchanged.

Seal that cake in an acrylic case with some dessicated, and it'll last a lifetime.

Class B has much more maple flavor, it's often used in candies. Don't let the name fool you. B IS THE BEST. PERIOD. It is often harvested at the end of a long grow season, and the trees are dehydrated, the sap tends to have more sap sugars than early seasons.

It a bit harder to get for this. You have to have a longer season than normal making it scarcer.

Im in the North East and have a maple guy who holds a gallon of it for me each year when he has it. It's the only syrup I use now. It's divine.

Lyophalizers are the industry name for freeze dryers.

You can try to rig one up yourself, but the process requires the sample to be deep frozen first as all water in the sample needs to be frozen, and to prevent meeting during the drying process you tend to take the sample to - 80C or so.
