You don't have to be authentic about everything. At the end of the day you still have a budget to hit.

You'd be surprised, almost every one of your examples have been used authentically in one movie or another from using authentic buildings or materials for set construction, to original guns as props and all the rest.

Perhaps Tarantino had his people reach out to Martin and they bit. So he nixed something else to make budgetary room for the guitar.

And that part of the move is a long pause in action/dialogue in the movie, a respite for a minute where the focus is almost completely on her for a good portion of the shot.
