As somebody involved in Environmental Health in the United Kingdom, your equivalent is the 'Health Inspectors' (I believe).

What has been the most challenging aspect (for you as owners/staff) of complying with Food Hygiene and Health and Safety legislation from:

• An initial start-up level,
• An importation point of view, and
• Your position now, where (from the video, it seems you have quite a large floor space with a number of staff?
