This was actually a self-chosen mascot. Back in the early years of the school (late 1800's and early 1900's), students attending Notre Dame were largely poor farmboys who were predominantly Irish. People mocked the school for allowing Irish (and Catholic) men to achieve an education. As a result, the student body voted to change the mascot to "the fighting Irish" as a statement that they were proud of their heritage and to counter the stereotype that they were belligerent drunks. Prior to that, the mascot was actually a terrier I believe.
