Awesome! I sincerely wish you the best of luck. My wife dearly misses pizza, and the current stuff doesn't begin to cut it, so even if you can't get the taste perfect, just having something close to the real texture of cheese would be amazing.

Much of the time that stuff doesn't even meet the American definition of cheese. They have to label it 'cheese food'.
