Honest answer... if someone started reeling off a laundry list of allergies I'd just refuse to serve them. Its not worth the risk otherwise.

I hope you are calling Child Protective Services on every parent that takes their kid into McDonald's or buys them a candy bar, because your logic dictates that they are child abusers for feeding their children something they aren't optimized to eat...
There is a world of difference with feeding someone something as an occasional treat, and them living on it.
My dog likes a McDonalds every now and then when I happen to be having one while he's with me. Its absolutely fine as an occasional treat. Heres some pics of him having a pizza, a mixed grill & a steak. Its all fine as part of a balanced diet. https://imgur.com/a/96yVf
I don't think vegan is a great choice for a dog but a good vegan diet is better than a bad granule based one. I'm not a vet but I do own a dog sanctuary and responsible for 30 dogs...

Well lets put it into perspective.
A dentists average salary is $150,000 in America... $300,000 debt to be able to earn at this level all of your working life is almost certain to be the best investment he ever makes.
Out here in Portugal I know first hand loads of very good animal vets who earn less than $30k a year. I think they'd all happily take a deal where they got landed with $300k debt as they left school, to earn 5-10 times what they do now.
