Hi, I think you have one of the best questions. I have had wines that I would revisit and never tasted as great as I had the first time. I will revisit multiple times at great expense and they never quite did it for me again. I think it is difficult to do regularly, that amazing combination. Even if you go to great restaurants around the world, tasting menus, etc., there is maybe only one out of 10 courses that will knock it out of the park. I think some of the great chefs of the world wrestle with this.

And what was the best wine you ever drank? Cannot be 47 cheval, 99 la tache, any 61 Bordeaux, etc. something more accessible.

Wow, that is unusual. Where was the dinner? Aside from having a tasting menu with white truffles in every course in Alba, I have yet to experience 4 out of 6 courses that were amazing. I think the best record for a tasting menu has been at Joel Robuchon in Monaco. That is probably my best dining experience.
