So if a car zooms in front of me then slams on the breaks and I hit their rear, I would still likely be found at fault?
Honestly, yes 50-60% of the time depending on who the adjuster is. Assuming they say they were just stopped/traveling in their lane and you hit them. There is no way to prove what you said is true and if it ever goes to court you are going to lose.
If I had a dash cam would that absolve me completely?
It would help tremendously in ALL acccidents

I see a bunch, but a few crazy ones quickly:
Drunk kid loses control, hits a curb, hits a wall and knocks it over but the way it falls makes it kind of a ramp. He flies up and boardslides the roof of a house and then lands it back on the sidewalk
Maid of honor driving passed out drunk bride back from bachelorette party. Runs a red and she fractures multiple vertabrae a few days before wedding
Homeowner claims are the craziest:
Someone hands a dude a simulation grenade at a party. Shit blows in his hand pretty much obliterating the entire hand.
Had a claim (NOT A LAWSUIT THEY ARE DIFFERENT THINGS*) where the tenant got bit by a spider and the attorney was trying to make a claim against the landlord.
*a claim can lead to a lawsuit but just because someone filed a claim against you doesn't mean they are suing you
