I know it's none of my business but an approach could be to let the kids be. Let them choose to follow whatever they want once they have the tools to come to that decision.

The Chinese concerns are just very nationalistic in nature. Hypocritical of citizens to demand democracy? In this age democracy can actually be deemed a legitimate right of people. Why should it be seen in the light of the situation in HK 50 years ago. The argument of democracy is coming from the present generation of people living in HK and represents their will and aspiration.

I have a feeling your interpretation of different culture of HK is the view of the mainland Chinese coming from what could be an 'inferiority complex'(sorry to be so blunt) and some shame from their colonial past. I can relate to that view to an extent as my home country was also under colonial rule for a long time and we do see some reflection of that in perspective of a lot of people. By pushing this picture China is trying to delegitimise the actual cultural differences present from language to art to food.

There are countries without military, but either way the current protests do not seek independence from China, yet! So why bring it up!

Let's not kid ourselves on the extradition bill, which would just be an accessory for the Chinese govt to impose their political will on HK.
