Tomatoes that you buy from the supermarket are generally picked way too early, because ripe tomatoes don't travel properly, or last long. They're then "artificially" ripened using nitrogen. This makes them turn red, but they don't really develop the same flavour.

If you find vine ripened or truss tomatoes, they'll be more expensive but taste much better. If you grow your own tomatoes and pick them from the vine when they're ripe, you'll know true tomato happiness.
