Would you please recommend a resource which will explain your field, perhaps as differentiated from cognitive science? Something understandable to someone with a BS in a STEM field unrelated to theoretical neuroscience, who may be interested in changing fields?

FWIW, I have found myself listening to different music than I listened to during adolescence and I hardly ever listen to the music of my adolescence now. It's similar with food, though I'm uncertain if there is any connection there.

Agreed. It might be that you only noticed because you were more relaxed, and the issue existed all along. Go to a doctor.

If you're not currently a composer, maybe you're missing your calling? I've read that composer's often hear music and they have to write it down to get it out of their heads, and musicians need to play. Think of it like writing a to-do list calming your mind enough that you can stop thinking about the things you need to do. If you don't already play an instrument, you might consider learning how or how to write music. There's also software which will record what you play for you (which helps if you play by ear).
