that's not quite correct

a canary has an expiration date, it should be updated before this expiration date, or assumed compromised

it's against the terms of a gagging order to take the page down to indicate that you've been subpoenad, however it's not against the terms to not do something

Okay, I'll help explain, given my inference from his original comment

We don't store any data

long-term, i.e. it isn't retained, it is obviously stored so the AI can actually look at it

All of it is scrubbed after 24 hours

the AI will store the data for 24 hours, in case of false negatives etc, after this, it's permanently deleted. It's likely storing to a 24 hour loop, so even if they wanted to steal all your data, they'd have to check in at minimum every 24 hours

storing as little customer data as possible

you have to store data to run a business, customer records etc.

However, I would agree that they need to be more transparent with exactly what is stored, where, by who, and for how long
