I'm reading your responses and I figured I'd discuss clinical trials. When developing a new medication or treatment, the process to have it approved is highly regulated and requires strict adherence.
Studies begin with a Phase I trial. This usually consists of 6-10 (up to 100) healthy individuals (or patients depending on the treatment.) This is to develop an idea about the mechanisms of the treatment. No efficacy data can be reliably extracted.
Phase II trials are studies with 100-500 patients. This is to confirm the safety of the treatment. You also gather some preliminary efficacy data.
Phase III are the bread and butter of clinical trials. The most expensive as the trials consist of 1000s-10000s. This is when efficacy data is extracted and can be applied to a population. Safety issues, adverse events and efficacy is gathered from this point. If the trials are successful they can apply to the government for marketing. This whole process takes 8-12 years.
So in the food/MS trial it is simply a phase I trial to gather safety data. It would be unethical to test an unknown treatment on an initial large sample.

Out of every 10,000 discovered drugs, one will make it to market. This is why drug costs are so high, the development cost is massive. Taking a drug through the entire process costs $800M-1B.
