In your MS cafeteria, do you guys eat at Pivot Tables?

Why can't I open two separate workbooks in two separate windows, without reopening the application? For example, if I open two Word documents within one instance of Word, they are wholly separate. If I open two workbooks within Excel, I must minimize one to access the other. Only workaround I've found is to open the first workbook. Then reopen Excel again and open the second workbook.
