He tried, though. He made a couple of dark comedies, rom-coms, and family-serious movies... and they didn't do terribly well. Combined, his more serious efforts made considerably less at the box office than You Don't Mess With the Zohan.
You can't blame him for making schlock movies... it's very clearly what his fans want, and he's found a way to keep himself contented while he does a job he doesn't love anymore. We should all be so lucky.

I'd put money on it being because Marc used to be (and maybe still is) a jealous, narcissistic man child, incapable of taking responsibility for anything... Even what he ordered for lunch.
That, or because he was a raging asshole to any newcomer to the NYC comedy scene in the 80's and 90's. He watched as everyone around him from the scene blew up, got shows and record deals, while he was left behind (due to the aforementioned personality traits), and he turned abusive and mean.
It could be other reasons, but Marc's ability to shoot himself in the foot is legendary.
