When you're not sure how much of a season or episode count you're going to have, how far do you plan things in advance with your writing, and how much do you let just happen as it goes? Or to word it another way, using an example from LOST, did you know that Ben Linus would exist when you first wrote Season 1? Hopefully this makes sense.
