Because the food market is tough as nails. I don't know, I've even seen it in real life - This place in Toronto made what were honest to God the best sliders I've ever had. The man was a fucking genius -
Lamb stuffed with goat cheese with tzatziki sauce on top
Mu Shu pulled pork with hoisin sauce, Asian slaw and wonton crisps
Spicy Jerk pulled chicken topped with mango slaw and honey sriracha sauce

Everything from the burgers to the fries to the crisps to the sauces were locally sourced and home made. He had a storefront on one of the busiest intersections in that part of town. He should have been rolling in money.

The restaurant shut down after, like, a year. Even with everything looking so good, he just couldn't bring in the customers in a neighbourhood where people just went to the same places over and over.

Way I see it, Pesto's is the "kinda shitty, but safe and popular family restaurant", a local institution. Bob is a little indie place without the reputation across the road.

You get what you deserve for being such a... such a..... pretty ok dude, actually.
