What’s the basic protocol for someone who reacts violently to being scared?

If it's an accident just try to get them through the house before they can hurt someone else. If they're actually trying to fight someone they're taken out by security

Are there idiots who actively try to pick fights with you guys? Also, is there a master control room with CCTV where someone watches over the whole thing?

Yes there are idiots who try to fight us. We're not a big house and don't have that kind of budget for a man in the chair type camera set up. As far as I know we one have one camera on the front gate
